New Year's Cookies, Vegan-style

Since we had a vegan houseguest (Liz) for New Year's, I decided to try a recipe from The Joy of Vegan Baking cookbook that my brother Brandon got for Christmas. I wavered between several recipes that looked delicious until I finally decided upon my favorite, peanut butter cookies with chocolate chips added.

Despite accidentally doubling the vegan butter to 1C (or maybe because of) they turned out delicious. They were flatter than anticipated -- probably the extra butter -- but still chewy. I consider myself a connoisseur of peanut butter cookies, and these were among the best I've had. The peanut butter flavor seemed to intensify after the first day, and the extra butter just added to the richness. These cookies will convince anyone that vegan cookies are just as delicious as cookies made with cow's butter and eggs.
